- 1 tablespoon sesame oil
- 1 block firm tofu, cubed
- 1 large carrot, thinly sliced
- 1 cup shiitake mushrooms, sliced
- 4 green onions, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 quart vegetable broth
- 4 cups water
- 3 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 2 packs udon noodles
- Sesame seeds for garnish
- Chopped green onions for garnish
- Sliced nori (seaweed) for garnish

In a large pot, heat sesame oil over medium-high heat. Add cubed tofu and cook until golden brown on all sides, about 5 minutes. Remove tofu from the pot and set aside.

In the same pot, add sliced carrot, shiitake mushrooms, and sliced green onions. Sauté until the vegetables are tender, about 3-4 minutes.

Add minced garlic and grated ginger to the pot. Cook for an additional 1-2 minutes until fragrant.

Pour in vegetable broth and water. Bring the mixture to a gentle simmer.

Dilute miso paste in a small amount of broth and add it to the pot, stirring well. Add soy sauce and mirin, adjusting to taste.

Cook the udon noodles according to package instructions. Drain and divide among serving bowls.

Ladle the hot miso broth and vegetables over the udon noodles.

Top each bowl with the reserved tofu, sesame seeds, chopped green onions, and sliced nori.
