- 1 pound pork belly or pork shoulder, thinly sliced
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 large carrots, julienned
- 4 green onions, sliced
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon sake
- 8 cups chicken broth
- 2 tablespoons miso paste
- 2 sheets nori (seaweed)
- 4 portions of ramen noodles
- Soft-boiled eggs, halved, for serving
- Marinated bamboo shoots (menma), for garnish
- Sesame seeds for garnish
- Chopped green onions for garnish

In a large pot, heat sesame oil over medium-high heat. Add sliced pork and cook until browned, about 3-4 minutes. Add chopped onion, minced garlic, and grated ginger; cook until the onion is softened, about 3 minutes.

Pour in soy sauce, mirin, and sake. Stir to coat the pork and vegetables evenly.

Add julienned carrots and sliced green onions to the pot. Cook for an additional 2 minutes.

Pour in chicken broth and bring the mixture to a simmer. Dilute miso paste in a small amount of broth and add it to the pot, stirring well.

Simmer the broth for 25-30 minutes, allowing the flavors to meld.

While the broth simmers, cook the ramen noodles according to package instructions. Drain and set aside.
