  • 1 tablespoon sesame oil
  • 1 pound pork belly or pork shoulder, thinly sliced
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 large carrots, julienned
  • 4 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake
  • 8 cups chicken broth
  • 2 tablespoons miso paste
  • 2 sheets nori (seaweed)
  • 4 portions of ramen noodles
  • Soft-boiled eggs, halved, for serving
  • Marinated bamboo shoots (menma), for garnish
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Directions

  1. In a large pot, heat sesame oil over medium-high heat. Add sliced pork and cook until browned, about 3-4 minutes. Add chopped onion, minced garlic, and grated ginger; cook until the onion is softened, about 3 minutes.
  2. Pour in soy sauce, mirin, and sake. Stir to coat the pork and vegetables evenly.
  3. Add julienned carrots and sliced green onions to the pot. Cook for an additional 2 minutes.
  4. Pour in chicken broth and bring the mixture to a simmer. Dilute miso paste in a small amount of broth and add it to the pot, stirring well.
  5. Simmer the broth for 25-30 minutes, allowing the flavors to meld.
  6. While the broth simmers, cook the ramen noodles according to package instructions. Drain and set aside.
  7. Divide the cooked ramen noodles among serving bowls. Ladle the hot broth over the noodles.
  8. Top each bowl with soft-boiled egg halves, marinated bamboo shoots, nori sheets, sesame seeds, and chopped green onions.
  9. Serve immediately and savor the rich flavors of this Classic Shoyu Ramen!
