  • 1 tablespoon sesame oil
  • 1 pound boneless, skinless chicken thighs, thinly sliced
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons miso paste
  • 2 teaspoons chili garlic sauce, or to taste
  • 1 quart chicken broth
  • 4 cups water
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin
  • 1 teaspoon sesame seeds, for garnish
  • 4 portions of ramen noodles
  • 2 cups baby spinach
  • 4 soft-boiled eggs, halved
  • Sliced green onions for garnish

Directions

  1. In a large pot, heat sesame oil over medium-high heat. Add sliced chicken and cook until browned, about 3-4 minutes. Add sliced onion, minced garlic, and grated ginger; cook until the onion is softened, about 3 minutes.
  2. Stir in miso paste and chili garlic sauce, coating the chicken and onions evenly. Pour in chicken broth, water, soy sauce, rice vinegar, and mirin. Bring the mixture to a simmer and let it cook for 15 minutes.
  3. While the broth simmers, cook the ramen noodles according to package instructions. Drain and set aside.
  4. Divide the cooked ramen noodles among serving bowls. Ladle the hot broth over the noodles.
  5. Top each bowl with baby spinach, soft-boiled egg halves, and sliced green onions. Sprinkle sesame seeds on top for garnish.
  6. Serve immediately and enjoy your spicy miso ramen!
