  • 8 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon marjoram
  • 1/2 teaspoon caraway seeds
  • Salt and freshly ground black pepper to taste
  • Croutons and grated cheese for garnish

Directions

  1. Start by melting the butter in a medium-sized saucepan over medium heat. Once melted, add the minced garlic and finely chopped onion, sautéing until fragrant and golden, about 3-4 minutes.
  2. To the saucepan, add the diced potatoes, stirring them in with the garlic and onion mixture. Cook for an additional 2 minutes to allow the flavors to meld.
  3. Pour the vegetable broth over the sautéed mixture. Season with marjoram, caraway seeds, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, approximately 20 minutes.
  4. Once the potatoes are soft, use an immersion blender to puree the soup until smooth. Alternatively, you can blend the soup in batches using a standard blender.
