  • 8 ounces rice noodles
  • 1 tablespoon coconut oil
  • 3 tablespoons Thai red curry paste
  • 1 small onion, sliced
  • 1 bell pepper, julienned
  • 2 carrots, julienned
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1/2 pound tofu, cubed
  • Fresh lime juice from 1 lime
  • Salt to taste
  • Garnish: chopped cilantro and sliced green onions

Directions

  1. Prepare rice noodles according to package instructions; set aside.
  2. Heat coconut oil in a pan over medium heat. Sauté onion, bell pepper, and carrots until slightly softened, about 5 minutes.
  3. Stir in the red curry paste, cooking for a minute until fragrant.
  4. Pour in vegetable broth, coconut milk, soy sauce, and brown sugar; bring to a light simmer.
  5. Add tofu cubes to the soup and cook gently for about 10 minutes.
  6. Incorporate the prepared noodles and lime juice. Season with salt to taste.
