- Chicken stock, 3 cups
- Lemongrass, 2 stalks, smashed and cut into 2-inch pieces
- Galangal, sliced into thin pieces, 1/4 cup
- Kaffir lime leaves, 6, torn into pieces
- Thai chilies, sliced, 2 (adjust to taste)
- Fish sauce, 3 tablespoons
- Lime juice, from 2 limes
- Mushrooms, sliced, 1 cup
- Small tomato, quartered, 1
- Cilantro, chopped for garnish
- Salt to taste

Begin by bringing the chicken stock to a gentle simmer over medium heat, adding the lemongrass, galangal, and kaffir lime leaves.

Shortly after, introduce the chicken slices to the simmering broth, cooking until they're just done.

Coconut milk is next to go into the pot, followed by mushrooms and Thai chilies. Let everything simmer softly, ensuring it doesn't come to a boil.
