  • 1 red bell pepper, diced

  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 cup chopped tomatoes
  • 1 cup protein of choice (tofu, chicken, shrimp)
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges for garnish

Directions
