- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 large parsnips, peeled and chopped
- 2 teaspoons curry powder
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- Salt and pepper, to taste
- Fresh cilantro, for garnish

Warm olive oil in a saucepan over medium heat. Add chopped onion and garlic, sautéing until they become translucent.

Stir curry powder into the onion mixture and cook for a minute until fragrant.

To the saucepan, add parsnips and cover them with vegetable broth. Season with salt and pepper.

Once boiling, reduce heat and simmer until parsnips are tender, about 25 minutes.

Off the heat, blend the soup until smooth using an immersion blender or stand blender.
