- 2 tablespoons olive oil
- 1 medium butternut squash (about 2 pounds), peeled, seeded, and diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 4 cups vegetable stock
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Optional garnishes: toasted coconut flakes, fresh cilantro, or a squeeze of lime

Warm olive oil in a stockpot over medium heat. Add diced onions, minced garlic, and grated ginger, sautéing until onions are translucent.
