  • Chicken breasts, skinless and boneless (4 pieces)
  • Fresh spinach leaves (4 cups)
  • Olive oil (2 tablespoons)
  • Garlic, minced (2 cloves)
  • Salt (to taste)
  • Ground black pepper (to taste)
  • Optional: Herbs and spices of choice

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Warm olive oil over medium heat and sauté garlic until fragrant.
  3. Introduce spinach to the pan and cook until wilted. Season with salt and pepper.
  4. Make a horizontal cut in each chicken breast to form a pocket. Stuff with the cooked spinach.
  5. Secure the chicken breasts with toothpicks and season the outside with salt, pepper, and optional herbs.
  6. Place chicken in a baking dish and cook for about 20-25 minutes or until the chicken is thoroughly cooked.
