  • Red lentils (1 cup)
  • Coconut milk (1 can, 14 ounces)
  • Vegetable broth (4 cups)
  • Onion, diced (1 large)
  • Carrots, diced (2 medium)
  • Garlic, minced (3 cloves)
  • Ginger, grated (1 tablespoon)
  • Curry powder (2 teaspoons)
  • Turmeric (1/2 teaspoon)
  • Olive oil (2 tablespoons)
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lemon wedges for serving

Directions

  1. Sauté onions, garlic, and ginger in olive oil until the onions are translucent.
  2. Add carrots and cook until slightly soft.
  3. Stir in lentils, turmeric, and cumin until well combined with the aromatics.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Reduce heat, add coconut milk, and simmer until lentils are tender.
  6. Use an immersion blender to puree the soup to your desired consistency.
  7. Season with salt and pepper, garnish with cilantro, and serve warm.
