- 2 pounds kumara (sweet potatoes), peeled and cubed
- 1 tablespoon coconut oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 4 cups vegetable stock
- 1 can (14 oz) coconut milk
- Salt and pepper, to taste
- Fresh cilantro and toasted coconut flakes, for garnish

Begin by heating coconut oil in a medium-sized saucepan. Add diced onion, minced garlic, and ginger, sautéing until fragrant and onion is transparent.

Stir in the cubed kumara, sautéing briefly before pouring in the vegetable stock. Season with salt and pepper. Bring to a simmer, then cover and cook until kumara is soft.

Once the kumara is tender, blend the soup using an immersion blender until smooth. Stir in the coconut milk and heat through. Adjust seasoning if necessary.
