Ingrediens
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 2 cups pumpkin, peeled and cubed
- 1 cup red lentils
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish

Heat olive oil in a saucepan over medium heat. Add onion and garlic, sauté until softened.

Stir in curry powder, cumin, and turmeric, cooking for a minute until fragrant.

Add the pumpkin cubes, lentils, and vegetable broth. Season with salt and pepper. Bring to a boil, then simmer uncovered for 20 minutes, or until the pumpkin is tender and lentils are cooked.
