- 1 pound of pork shoulder, cut into chunks
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 stalks of celery, chopped
- 3 cloves of garlic, minced
- 6 cups of chicken or vegetable broth
- 2 potatoes, cubed
- Salt and pepper to taste
- 1 teaspoon of dried thyme
- 1 bay leaf
- Fresh parsley, chopped for garnish

Begin by heating the olive oil in a pot over medium heat. Add the pork chunks and sear until golden brown, then set aside.
