Recipe:

Ingrediens

  • 1 pound of pork shoulder, cut into chunks
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks of celery, chopped
  • 3 cloves of garlic, minced
  • 6 cups of chicken or vegetable broth
  • 2 potatoes, cubed
  • Salt and pepper to taste
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • Fresh parsley, chopped for garnish

Directions

  1. Begin by heating the olive oil in a pot over medium heat. Add the pork chunks and sear until golden brown, then set aside.
  2. In the same pot, sauté the onion, carrots, and celery until they start to soften. Add the garlic and cook for another minute until fragrant.
  3. Return the pork to the pot along with the broth, potatoes, thyme, and bay leaf. Season with salt and pepper.
  4. Bring the soup to a boil, then reduce the heat to low and let it simmer for about an hour, or until the pork is tender and the flavors are melded.
  5. Discard the bay leaf, adjust seasoning as needed, and serve hot, garnished with fresh parsley.

Tips and Tricks

  1. Browning the pork before adding it to the soup adds depth to the flavor.
  2. For a thicker broth, mash some of the potatoes directly in the pot before serving.
  3. This soup tastes even better the next day, as the flavors have more time to develop.
