  • 1 pound of chicken breasts
  • 1 can of black beans, rinsed and drained
  • 1 can of corn, drained
  • 1 can of diced tomatoes, undrained
  • 1 can of green chiles, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Garnishes: avocado slices, shredded cheese, tortilla strips, lime wedges, fresh cilantro

Directions

  1. Combine chicken breasts, black beans, corn, diced tomatoes, green chiles, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper in the Crock Pot.
