Ingrediens

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 jalapeño, seeded and finely chopped
  • 1 teaspoon ground cumin
  • 6 cups chicken broth
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 (4-ounce) can diced green chiles
  • 3 chicken breasts, boneless and skinless
  • 1 cup frozen corn
  • 1 (15-ounce) can black beans, drained and rinsed

  • Juice of 1 lime
  • Fried tortilla strips, for garnish
  • Avocado slices, for garnish
  • Chopped fresh cilantro, for garnish

Directions

  1. Initiate the Base: Heat the olive oil in a soup pot over medium heat. Sauté onion, garlic, and jalapeño until the onion becomes translucent.

  5. Add Vegetables and Beans: Stir in the corn and black beans and continue to simmer until everything is heated through.
  6. Season and Serve: Season the soup with salt, pepper, and lime juice. Serve the soup hot, topped with fried tortilla strips, avocado, cilantro, radishes, and a dollop of sour cream.
