  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 bell pepper, chopped
  • 2 potatoes, peeled and cubed
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth
  • 1 can (10.75 oz) condensed tomato soup
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. Sauté Meat: Heat the olive oil in a soup pot. Add the beef cubes and brown them on all sides. Remove and set aside.
  2. Cook Vegetables: In the same pot, add onion and garlic. Cook until they are soft. Stir in carrots, celery, green beans, and bell pepper, cooking until slightly softened.
  3. Combine Ingredients: Return the beef to the pot. Add potatoes, diced tomatoes, beef broth, and tomato soup. Stir well.
  4. Season: Sprinkle oregano and basil into the pot. Season with salt and pepper. Bring the mixture to a boil, then reduce to a simmer.
