- 1 pound beef stew meat, cubed
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 bell pepper, chopped
- 2 potatoes, peeled and cubed
- 1 can (15 oz) diced tomatoes
- 4 cups beef broth
- 1 can (10.75 oz) condensed tomato soup
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Sauté Meat: Heat the olive oil in a soup pot. Add the beef cubes and brown them on all sides. Remove and set aside.

Cook Vegetables: In the same pot, add onion and garlic. Cook until they are soft. Stir in carrots, celery, green beans, and bell pepper, cooking until slightly softened.

Combine Ingredients: Return the beef to the pot. Add potatoes, diced tomatoes, beef broth, and tomato soup. Stir well.

Season: Sprinkle oregano and basil into the pot. Season with salt and pepper. Bring the mixture to a boil, then reduce to a simmer.
