  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh chives for garnish
  • Lemon juice (optional, to taste)

Directions

  1. Prepare the Vegetables:
  2. Heat olive oil in a large pot over medium heat.
  3. Add chopped onion, minced garlic, and sliced leeks; sauté until soft and fragrant, about 5-7 minutes.
  4. Cook the Potatoes:
  5. Add diced potatoes to the pot and stir to combine with the other vegetables.
  6. Pour in the vegetable broth, bringing the mixture to a boil.
  7. Reduce heat and let it simmer until potatoes are tender, about 15-20 minutes.
  8. Blend the Soup Base:
  9. Once the potatoes are cooked, remove the pot from heat.
  10. Using an immersion blender, blend the mixture until smooth. Alternatively, let it cool slightly and blend in batches in a countertop blender.

  12. Scoop the flesh of the avocados and add to the soup along with the heavy cream and whole milk.
  13. Blend again until completely smooth and creamy.
