- 3 large leeks, white and light green parts only, finely chopped
- 2 tablespoons unsalted butter
- 4 large potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and white pepper, to taste
- Fresh chives, finely chopped for garnish
- Additional cream, for serving

Melt butter in a medium saucepan over low heat. Add chopped leeks and cook gently until they are soft but not browned, about 10 minutes, stirring occasionally to ensure they cook evenly.
