Recipe:

Ingrediens

  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium zucchini, diced
  • 1 jalapeño, seeded and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon dried oregano
  • 4 cups vegetable broth
  • 1 (15-ounce) can fire-roasted tomatoes
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen or fresh corn kernels
  • 1/2 cup tomato sauce
  • 1/4 cup fresh lime juice
  • Salt and pepper to taste
  • 4 small corn tortillas, cut into strips and lightly toasted
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup tortilla chips, crushed
  • 1 lime, cut into wedges

Directions

  1. Sauté the Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Stir in the garlic, red and green bell peppers, zucchini, and jalapeño. Sauté for another 5-7 minutes until the vegetables begin to soften.
  2. Season and Spice: Sprinkle in the cumin, chili powder, smoked paprika, coriander, and oregano. Stir well to coat the vegetables with the spices, cooking for an additional 2 minutes until fragrant.
  3. Add the Liquids: Pour in the vegetable broth, fire-roasted tomatoes, and tomato sauce. Stir to combine and bring the mixture to a gentle boil. Reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to meld together.
  4. Incorporate the Beans and Corn: Add the black beans and corn kernels to the pot. Continue to simmer for another 10 minutes until the beans and corn are heated through.
  5. Finish with Lime Juice: Stir in the fresh lime juice, adjusting the salt and pepper to taste. This adds a bright acidity that balances the rich, smoky flavors of the soup.
  6. Prepare the Tortilla Strips: While the soup is simmering, preheat the oven to 350°F (175°C). Place the corn tortilla strips on a baking sheet and bake for 10 minutes, or until crispy. Alternatively, you can toast them in a dry skillet over medium heat.
  7. Assemble and Serve: Ladle the soup into bowls, topping each with crispy tortilla strips, avocado slices, chopped cilantro, and crushed tortilla chips. Serve with lime wedges on the side for an extra burst of flavor.

Tips and Tricks

  1. Use Fresh Vegetables: Opt for fresh, organic vegetables whenever possible for the best flavor and nutritional value.
  2. Adjust the Heat: For a spicier soup, keep the seeds in the jalapeño or add a pinch of cayenne pepper. For a milder version, omit the jalapeño.
  3. Add a Smoky Element: To enhance the smoky flavor, consider adding a small amount of chipotle in adobo sauce or smoked tofu.
  4. Make It Heartier: If you want to make the soup more filling, add cooked quinoa or rice during the final simmering stage.
  5. Garnish Variety: Experiment with different toppings such as sliced radishes, vegan sour cream, or pickled jalapeños for added texture and flavor.
