Recipe:
Ingrediens
- 1.5 pounds of boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 4 cups low-sodium chicken broth
- 2 cups water
- 2 cloves garlic, minced
- 1 medium onion, diced
- 2 cups carrots, sliced
- 2 cups celery, chopped
- 8 oz egg noodles (wide)
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Directions
-
Prepare the Chicken: Season the chicken thighs generously with salt, pepper, and thyme.
-
Sear the Chicken: Heat the olive oil in a large pan over medium heat and sear the chicken for 3-4 minutes per side, until lightly golden. This will help lock in the flavor.
-
Add Ingredients to Slow Cooker: Place the chicken, garlic, onion, carrots, celery, rosemary, and chicken broth into the slow cooker. Cover and cook on low for 6 hours or on high for 3-4 hours.
-
Shred the Chicken: After the chicken is fully cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
-
Cook the Noodles: Add the egg noodles and cook on high for an additional 30 minutes until they’re soft.
-
Prepare the Cream Base: In a small bowl, whisk the heavy cream and flour until smooth. Stir the mixture into the slow cooker and cook on high for another 10-15 minutes to thicken the soup.
-
Season and Garnish: Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving.
