  • 600g (1.3 lbs) chicken thighs, cut into bite-sized pieces
  • 300ml (10 fl oz) coconut milk
  • 500ml (17 fl oz) chicken stock
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 200g (7 oz) egg noodles
  • Vegetable oil (for frying)
  • Lime wedges, fresh coriander, and chili paste (for garnish)
  • 10 dried red chillies (soaked in warm water)
  • 3 cloves garlic, chopped
  • 2 tsp ground coriander
  • 2 tsp turmeric powder
  • 1 tsp cumin
  • 1 stalk lemongrass, finely chopped
  • 4cm galangal (or ginger), roughly chopped
  • 4 makrut lime leaves, finely chopped
  • 1 tsp shrimp paste
  • Salt, to taste

Directions

  1. Prepare the Curry Paste: Soak the dried red chillies in warm water for 10 minutes, then blend with garlic, ground coriander, turmeric, cumin, lemongrass, galangal, lime leaves, shrimp paste, and salt until smooth.
  2. Cook the Chicken: Heat vegetable oil in a large pot over medium heat. Add the curry paste and sauté for 2-3 minutes until fragrant. Add the chicken pieces and cook until they start to brown, about 5 minutes.
  3. Add the Coconut Milk and Stock: Pour in the coconut milk and chicken stock. Stir in the fish sauce and palm sugar, then bring to a simmer. Reduce the heat to low, cover the pot, and cook for 30 minutes, allowing the chicken to absorb the flavors.
  4. Prepare the Noodles: Fry half the egg noodles in hot oil until crispy. Set aside. Cook the remaining noodles in boiling water according to package instructions, then drain.
  5. Serve: Divide the boiled noodles into bowls. Ladle the chicken curry over the noodles, then top with crispy fried noodles. Garnish with fresh lime wedges, coriander, and chili paste. Serve hot.
