- 2 kaffir lime leaves (optional)

- 1 red bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 cup shiitake mushrooms, sliced
- 1 bunch fresh Thai basil, leaves only
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 8 oz rice noodles (soaked according to package instructions)
