  • 2 tablespoons soy sauce or tamari
  • 1 cup snow peas
  • Juice of 2 limes
  • Fresh cilantro and green onions for garnish
  • Salt and pepper to taste

Directions

  1. Prepare the Aromatics: Heat coconut oil in a large soup pot over medium heat. Sauté the onion for 3-4 minutes until soft. Add the garlic and ginger, cooking for 1 minute until fragrant.
  2. Add the Curry Paste: Stir in the red curry paste and cook for another 2 minutes, allowing the flavors to blend.

  5. Combine the Ingredients: Add coconut milk, soy sauce, and snow peas to the pot. Simmer for 5 more minutes until snow peas are tender.
  6. Finish with Lime: Stir in lime juice and season with salt and pepper. Adjust flavors by adding more lime or soy sauce if needed.
  7. Serve: Divide noodles into bowls, ladle soup over the top, and garnish with fresh cilantro and green onions.
