Ingrediens
- 1 tablespoon coconut oil
- 1 yellow onion, thinly sliced
- 3 garlic cloves, minced
- 1-inch ginger, minced
- 3 tablespoons red curry paste
- 1 medium sweet potato, diced
- 6 cups vegetable broth
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 4 oz brown rice noodles
- 1 can (14 oz) full-fat coconut milk
- 2 tablespoons soy sauce or tamari
- 1 cup snow peas
- Juice of 2 limes
- Fresh cilantro and green onions for garnish
- Salt and pepper to taste
Directions
-
Prepare the Aromatics: Heat coconut oil in a large soup pot over medium heat. Sauté the onion for 3-4 minutes until soft. Add the garlic and ginger, cooking for 1 minute until fragrant.
-
Add the Curry Paste: Stir in the red curry paste and cook for another 2 minutes, allowing the flavors to blend.
-
Add Vegetables: Add sweet potatoes and bell peppers. Sauté for 2-3 minutes, then pour in the vegetable broth. Bring to a boil, then reduce to simmer for 15 minutes until the sweet potato is tender.
-
Cook the Noodles: Meanwhile, cook rice noodles separately according to package instructions. Drain and set aside.
-
Combine the Ingredients: Add coconut milk, soy sauce, and snow peas to the pot. Simmer for 5 more minutes until snow peas are tender.
-
Finish with Lime: Stir in lime juice and season with salt and pepper. Adjust flavors by adding more lime or soy sauce if needed.
-
Serve: Divide noodles into bowls, ladle soup over the top, and garnish with fresh cilantro and green onions.

Tips and Tricks
-
Use Fresh Ingredients: Fresh ginger, garlic, and lime juice are essential for authentic flavors. Cook Noodles Separately: Avoid mushy noodles by cooking them separately and adding them to the soup just before serving
-
Adjust Spice Levels: For more heat, add fresh chili slices or extra curry paste. If it's too spicy, add a bit more coconut milk.
