Recipe:

Ingrediens

  • 1 whole chicken (approximately 4 pounds), frozen
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 lemon, halved
  • 1 large onion, quartered
  • 3 cloves garlic, smashed
  • 3 carrots, peeled and cut into chunks
  • 3 celery stalks, cut into chunks
  • 1 cup chicken broth or water

Directions

  1. Prepare the Vegetables: Place the quartered onion, chopped celery, and carrot chunks at the bottom of the crockpot to create a vegetable bed.
  2. Season the Chicken: In a small bowl, combine sea salt, black pepper, smoked paprika, garlic powder, onion powder, and rosemary. Rub the seasoning mix all over the chicken, ensuring even coverage.
  3. Stuff the Chicken: Place the lemon halves and smashed garlic cloves into the chicken’s cavity for enhanced flavor.
  4. Position the Chicken: Lay the chicken on top of the vegetable bed, breast side up, in the crockpot.
  5. Add the Broth: Pour the chicken broth around the edges of the crockpot, avoiding direct contact with the seasoned chicken.
  6. Start Cooking: Cover the crockpot and set it to cook on high for 4-5 hours or on low for 7-8 hours. The chicken is ready when its internal temperature reaches 165°F (74°C).
  7. Rest the Chicken: Once cooked, carefully remove the chicken from the crockpot. Let it rest for 10 minutes before carving.
  8. Serve: Slice the chicken and serve it alongside the vegetables and your favorite side dish.
